If you don't have a waffle maker, you might want to get one quick. Crispy, light, and full of flavor, these vanilla scented gems may well become a Sunday morning standby. All you need are six ingredients, one bowl, and that waffle iron. No eggs or dairy necessary. (Photo source: Kitchen Treaty)

Ingredients

1 14oz can coconut milk (about 1 ¾ cups)

2 teaspoons pure vanilla extract

1 ½ cups all-purpose flour

cup granulated sugar

2 teaspoons baking powder

Pinch of salt

Fresh berries and maple syrup

Preparation

Preheat your waffle maker.

If the coconut milk is solidified, place it into a small saucepan set over low heat, and stir occasionally. Heat just until it turns into liquid, but not warm.

Pour coconut milk into a large mixing bowl along with vanilla extract and stir with a wooden spoon to combine.

Add the flour, sugar, baking powder, and salt. Mix until combined. Make sure not to over-mix—a few lumps are okay.

Unless you're using a nonstick waffle maker, be sure to coat the insides with canola oil or vegan butter.

Pour batter into your waffle maker. Every waffle maker is different so be sure not overfill yours. Cook until golden brown - time will be contingent on waffle maker models.

Serve with maple syrup and fresh berries.
