Soy Chorizo Flautas with Lime Crema

In my Mexican household, chorizo has always been more than a breakfast food. We put it in sandwiches, quesadillas, tostadas—and in anything else we can, really. So it only made sense to wrap it inside white corn tortillas, along with a few other ingredients. In a single bite, you get a taste of refried beans, chorizo, crispy potatoes, and shredded cheese — what’s not to love? For the ultimate crunch factor, we recommend making these in an air fryer. Ingredients

For the chorizo: 

1 tablespoon olive oil

1 large potatoes, peeled and chopped

Salt and pepper to taste

1 pack of soy chorizo

For the assembly:

1 pack of small, white flour tortillas

1 can of refried pinto beans (vegan)

Vegan shredded cheese

For the lime crema:

¼ cup vegan cream cheese (we recommend Tofutti)

1 tablespoon lime juice

Water to thin out

Recommended toppings:

Choice of greens, shredded

Avocado or guacamole

Cilantro, chopped

Lime crema 

Hot sauce

Preparation

For the chorizo:

Add the oil and potatoes to a large pan. Cover and cook on medium heat for 10 to 15 minutes or until the potatoes are tender, making sure to stir regularly. Add salt and pepper to taste, then add the chorizo and cook for another 3 to 5 minutes. 

For the assembly: 

Slightly warm your tortillas on a skillet. They should be flimsy and easy to work with.

Spread a thin layer of beans on each tortilla, and sprinkle some cheese on top. Place a small amount of the chorizo mixture near the bottom of the tortilla, then roll up. Repeat for each flauta.

Air fryer method (recommended): Line the flautas inside the air fryer compartment with the opening flap face down. Cook for 15 minutes at 200℉. 

Oven method: Line the flautas on top of a lightly oiled baking sheet with the opening flap face down. Bake for 20 minutes at 425℉, then broil for 1 minute.  

For the lime crema: 

In a small bowl, mix together the cream cheese and lime juice until fully combined, then add water to reach your desired consistency. 

Once your flautas are ready, cover them in your favorite toppings and enjoy!
