Herby Green Lentil Spread

This quick and easy lentil spread is a great way to use up some leftover lentils and a healthy snack or appetizer. I love the pale green color that comes from the cilantro.

| Yield: 1 cup | Time: 10 minutes |


Ingredients

1 Cup cooked green lentils

1/4 cup lemon juice

2 tablespoons tahini

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1 teaspoon olive oil

Sea salt and black pepper

1/4 cup cilantro

Preparation

Cook lentils according to package if using uncooked. Drain and let cool.

Combine the lentils, lemon juice, tahini, spices, cilantro, and salt and pepper to taste in a food processor or high speed blender and process until smooth. Taste and add more lemon as needed.
