Berry and Granola Breakfast Parfait

I don’t know about you, but breakfast is what gets me up in the morning. Parfaits are artful, nutritious, and filling, and make a great start to the day. Serve in a glass dish so the layers are visible. (Photo source: DessArts)

| Yield: 2 parfaits | Time: 10 minutes |


This recipe originally appeared in Growing Perennial Foods: A field guide to raising resilient herbs, fruits, and vegetables, by Acadia Tucker.

Preparation:

In an 8 ounce glass jar, stemless wine glass, or glass cup, layer ¼ cup yogurt, a drizzle of honey or jam, 3 T granola, and ¼ cup berries. 

Repeat. Make the second parfait the same way and serve immediately.

Ingredients:

1 cup plain yogurt, or dairy-free yogurt

Honey or jam for drizzling

12 T Chunky Cinnamon Almond Granola

1 cup currants, sliced blackberries, and sliced strawberries
