Health-Boosting Green Smoothie

Whenever I indulge a bit too much, I make this smoothie the next day. Perfectly balanced with healthy veggies, sweet fruits, and refreshing lemon, you’ll feel great in no time. Plus, it makes enough to energize you throughout the week. (Photo source: Alec Tilly)

| Yield: 4 servings | Time: 10 minutes |


Ingredients

3 stalks celery, roughly chopped

3 large leaves kale, torn

1/2 large cucumber, roughly chopped

2 frozen bananas, sliced

1 large orange, peeled

4 pitted medjool dates

1 lemon, juiced

2 teaspoons spirulina (optional)

a handful of ice cubes

goji berries for garnish (optional)

Preparation

Place all of the ingredients in a high speed blender and fill it about halfway full with water. Blend for a minute or two, until it is very thoroughly combined.

If your blender is less powerful and green flecks remain, simply keep blending until you’ve reached a good consistently.

Taste and adjust to your liking — add more lemon for brightness, or fruit for sweetness.

Store in a large jar in the fridge and dole out portions as desired.


Zero waste tips

  • Freeze your own bananas—I keep a plastic bag in the freezer and continue to refill it as my weekly bananas ripen. Simply peel, rough chop, and place in the bag for future smoothies.

  • Grow your own cucumber, lemons or kale.
