Lemon Caper Butter Lettuce Salad

This salad comes together quickly and is endlessly adaptable. Fresh, tender lettuce and a punchy lemon dressing form the base of the recipe. To give it more substance, feel free to mix in other toppings - toasted bread bits, nuts and seeds, thinly sliced radish, and dried fruit. Let your imagination run free.

Ingredients

1 head butter lettuce

1 lemon

3 tablespoons minced shallots

2 tablespoons dijon mustard

2 tablespoons capers, drained and finely chopped

¼ teaspoon salt

½ teaspoon sugar

¼ cup olive oil

Preparation

Wash and break up lettuce. Dry completely.

Juice lemons and strain out seeds. Place juice in a bowl and add shallots, mustard, capers, salt, sugar, and olive oil. Whisk together until smooth.

Drizzle over lettuce and serve.
