Carne Asada Avocado Toast

Ingredients

Vegan carne asada, prepared
Vegan eggs, scrambled according to directions and seasoned with salt and pepper
3 tomatoes, diced
1/2 large red onion, diced
1/4-1/2 cup cilantro, roughly chopped
2 lemon, juiced
Garlic Salt, pinch
Avocado
Garlic Powder
Salt
2 sliced bread of choice
Vegan Smoked Gouda cheese, sliced

Preparation

For pico de gallo
In a small bowl, mix together tomatoes, red onion, cilantro, lemon juice, and garlic salt. Set aside marinate for 30 minutes. Add more salt or lemon if needed for your taste.

For guacamole
In a small bowl, mash up some avocado, and mix with a spoonful of Pico, a pinch of garlic powder, lemon, and salt.

For toast
Toast your bread and top with slices of cheese. Place into the toaster oven to melt (you can use a pan if you don't have a toaster oven). Remove once the cheese has started to melt.

Top with your scrambled Vegan Egg and add your prepared Carne Asada, followed by your guacamole and pico de gallo. Serve and enjoy


Zero-waste tips

  • Give the avocado pit a second life as powder. Simply clean it thoroughly and leave it to dry for about 2 – 3 days. Then grate it (you can also use a coffee mill or food processor). The powder is an excellent addition to salads, soups, porridge, desserts, sandwiches, or smoothie.
