Champagne Black Garlic Aioli

Ingredients
2 tablespoon cold-pressed extra virgin olive oil
1 onion, sliced thinly
1 head of black garlic
⅓ cup plant-based mayonnaise
2 tablespoon champagne vinegar
1-3 tablespoon of water
Preparation
In a small pan, cook the onions in the oil on medium heat until translucent. Add in the garlic and cook for 3 minutes.
Transfer to a blender. Add the mayonnaise and vinegar.
Blend until smooth. Add water as needed. Serve.
