Quick Garlicky Kale
| Yield: 2-4 servings | Time: 10 minutes |
Preparation
Clean and wash kale thoroughly. Remove tough stems on kale by pulling at the base of the stem and pulling the leaves in the opposite direction to separate. Thinly slice the leaves so that you are left with ribbons of kale.
In a medium large saucepan heat olive oil until warm. Add the garlic and cook for a minute until just golden. Add the kale and a tablespoon of water and cover pan. Cook kale for 2-3 minutes, stirring periodically until wilted. Remove pan from heat and add cider vinegar and salt, pepper and red chili flakes to taste.
