Quick Pita Chips

Preheat oven to 400F. Line two baking sheets with aluminum foil. On a cutting board, open up each of the pitas to that they are divided into two thin rounds. Stack rounds and slice into 6-8 triangles depending on how large you want the chips. Repeat with remaining pitas.
Lay pita pieces on prepared sheets. If you can not fit all the pieces on two sheets just bake them in two phases. Brush olive oil on each of the pieces and sprinkle with salt and pepper. Bake for 10-15 minutes until golden around the edges, or slightly longer if you want a very crisp chip. Let cool and serve in an airtight container until ready to serve.
