|Yield: 6-8 Servings | Time: 50 minutes |

 

Preparation

Preheat your oven to 375 degrees. Mix together flour, baking powder, and salt in a large mixing bowl. Gradually stir in the melted butter, almond milk, vanilla, and applesauce. Fold in fruit.

Spray a loaf dish (a 9x5 size works best) with baking spray. Pour the mixture into the dish and bake for 35-40 minutes.

Ingredients

1 ½ cup flour

½ cup sugar

2 teaspoons baking powder

½ teaspoon salt

¼ cup melted vegan butter

½ cup vanilla almond milk

3 oz unsweetened applesauce (about ¾ of 1 standard applesauce cup)

1 teaspoon vanilla extract

¾ cup blueberries, strawberries, raspberries, or peaches
