In a large bowl, combine sugar and cornstarch. Add fruit and lemon juice and toss until fruit is thoroughly coated. Place the mixture in a baking dish.
Combine oats, flour, brown sugar, and salt in the now-empty bowl. Gradually mix in vegan butter. When fully mixed, layer the topping onto the fruit. Try to distribute the topping as evenly as possible while still leaving clumps in tact.
Bake for 30-35 minutes. Let cool before serving.
