Champagne Black Garlic Aioli

This unusual aioli has a sweet and earthy garlic flavor that is addictive. It is a perfect match with grilled vegetables. (Photo source: Dená Brummer)

| Yield: 4 servings | Time: 5 minutes|


Ingredients

2 tablespoon cold-pressed extra virgin olive oil

1 onion, sliced thinly

1 head of black garlic

⅓ cup plant-based mayonnaise

2 tablespoon champagne vinegar

1-3 tablespoon of water

Preparation

In a small pan, cook the onions in the oil on medium heat until translucent. Add in the garlic and cook for 3 minutes.

Transfer to a blender. Add the mayonnaise and vinegar.

Blend until smooth. Add water as needed. Serve.

  • The outer skins of onion and garlic provide an excellent source of vitamins A, C, E, and numerous antioxidants so toss the leftovers into a stock.
