Smashed Peas with Lemon on Toast
Ingredients
1 slice of toast
1 teaspoon of olive oil
1/2 cup fresh or frozen green peas
1 clove garlic, diced finely
Grated parmesan or Vegan Parmesan
Lemon juice to taste
salt and pepper to taste
Preparation
Place pan on stove over medium heat and add the olive oil. Add the peas and 1 tablespoon of water so the peas can steam a bit.
Cook until they turn bright green, about 2 minutes. Add in the garlic, squeeze of lemon juice, cheese, salt, and pepper. Stir to combine and then remove from heat.
Mash the peas with the back of a spoon. Pile onto warm toast and enjoy!
