Healing Lemon Balm and Ginger Tea

Preparation:
1. In a small saucepan, bring ½ cup water, lemon balm, and ginger to a boil. Turn off heat and add mint leaves. Steep for 30 minutes, strain and set aside.
2. Add another ¼ cup water to the strained lemon balm water.
3. Stir in lemon juice and honey. Serve warm or cool.
Note: Mixing when cool preserves the honey’s healing properties.

2 T dried lemon balm
2 T fresh ginger, diced
2 T chopped mint leaves
2 T lemon juice
¼ cup honey
