Oh how I love beets! They are earthy and sweet and gorgeous. My favorite way to eat them is boiled, peeled and sliced into a bowl with blue cheese, walnuts and oil and vinegar. But here's another idea, incorporating turnips which I sometime have a hard time with - this makes me WANT to eat turnips.
