One of the most delicious ways to prepare asparagus is to roast it. It cooks very quickly in the oven and develops great depth of flavor as it browns on the sides. Preparing this dish is quite simple and requires only a handful of ingredients. Feel free to add toasted almonds or serve the asparagus over a bed of arugula or to make the dish more hearty.

Preparation

Preheat oven to 400F. Arrange asparagus in a single layer on a rimmed baking sheet. Drizzle with olive oil and season with salt and pepper. Roast until tender, about 18-20 minutes. Transfer asparagus to a serving platter and drizzle with vinegar and parmesan if using.

*Note: if your balsamic is not aged just simmer it in a small saucepan until it reduces to a slightly thicker consistency and sweetens.

2 tablespoons aged balsamic vinegar*

Salt and pepper
