Balsamic Roasted Asparagus with Honey and Lime

Ingredients
1 bunch fresh asparagus
2 tbsp olive oil
1/4 cup balsamic vinegar
2 tbsp honey
Zest and juice of one lime
Salt and pepper to taste
Preparation
Remove the tough, woody ends of the asparagus with a knife. Rinse, pat dry, and place on a parchment-lined, rimmed baking sheet.
In a small bowl, mix together the oil, balsamic vinegar, honey, and lime zest. Toss asparagus with the balsamic dressing on the baking sheet.
Roast in a 375 degree oven for 25-35 minutes or until the tops are crispy and the stalk is fork tender. Halfway through the roasting, remove the tray and flip the asparagus to ensure even cooking and redistribute the dressing.
Serve directly from the pan or transfer to a shallow dish, gently pouring the remaining glaze over the asparagus.
Zero-waste tips
If your asparagus is a little limp, rehydrate it by trimming the stalks and placing them cut end down in a glass of water. Cover with a plastic bag and store in the fridge.
